Description

This recipe goes back many years and is a quick, easy side dish to have with practically any meal.

Instruction tip
Will last up to a week in the fridge in an airtight container.

Method

Step 1 of 6

Peel potatoes and cut into small cubes. Boil until just soft. Drain and once cooled transfer into large bowl.

Step 2 of 6

Dice bacon rashers and fry until crispy. Drain on absorbent paper.

Step 3 of 6

Boil the eggs for 7-10 minutes. Then once cooled, peel and cut into small pieces.

Step 4 of 6

Thinly slice shallots.

Step 5 of 6

Add all ingredients into a large bowl and combine gently. Then add mayonnaise and mix through. You can adjust the amount of mayonnaise to suit your taste.

Step 6 of 6

Season with salt and pepper if desired.
Instruction tip
Tip:

I do have a preference to use Praise Traditional mayonnaise for this as I like a creamier consistency and don’t like it to taste too tangy.
