  • 3 eggs
  • 4 rashers of rindless short bacon
  • 150grams pine nuts
  • 12 chives, chopped
  • pinch salt & pepper
  • 1 clove small garlic
  • 1/3 cup praise potato salad dressing

Description

A delicious potato salad that's easy to prepare.
Instruction tip
You don't have to add the pine nuts, we find it gives potato salad that something extra. I have also used shredded ham in place of bacon. Or try using different nuts and your own dressing.

Method

Step 1 of 6

Start by boiling eggs until hard. Once done, drain, and run under cold water then peel. Chop into small pieces and put into a bowl.

Step 2 of 6

Cut potatoes and cook in salted water with the small clove of garlic. Do not overcook potatoes. Once potatoes are cooked to your liking, drain and rinse under cold water. Throw the garlic away it is only to give potatoes a little extra flavour (you don't need to add if you don't like garlic). Add to bowl with egg.

Step 3 of 6

Chop bacon into small pieces & fry in a frypan until crispy or to your liking. Drain on paper towel to remove any oil if any. Add to bowl. Snip in chives.

Step 4 of 6

Lightly toast the pine nuts. Remove from pan once done so they can cool. Put aside until ready to serve potato salad.

Step 5 of 6

Season the potatoes, egg, bacon & chives with salt and pepper, then add the praise potato dressing (add as much or as little to your liking). Gently toss, as not to break up the potatoes to much. Put into the fridge for a few hours so the flavours can come together.

Step 6 of 6

Just before serving add the pine nuts and enjoy.
