  • 1 clove garlic, crushed
  • 1tablespoons Dijon mustard
  • 1tablespoons dill, chopped
  • 1/4 cup extra virgin olive oil
  • 2tablespoons red wine vinegar
  • 2tablespoons baby capers, drained

Method

Step 1 of 3

Cook potatoes according to packet instructions.

Step 2 of 3

Place vinegar, mustard and garlic in a small bowl, whisking with a fork until combined. Slowly add oil, whisking until combined.

Step 3 of 3

Place potatoes in a bowl and drizzle over dressing, tossing to combine. Scatter over dill, thinly sliced onion and capers, then season and serve.
