  • 4 medium sized potatoes
  • 3tablespoons extra virgin olive oil
  • 1tablespoons oregano
  • 1teaspoons Vegie salt
  • pinch chilli flakes
  • 1/2teaspoons sea salt

Description

A healthy traditional potato salad that goes well as a side dish for meat or chicken.

Method

Step 1 of 6

In a small saucepan place potatoes and salt, cover with cold water. Cook on medium heat for 20 minutes or until tender. You can use a knife to pierce them to see if they are cooked right through.

Step 2 of 6

Remove from heat and drain potatoes. Set aside to cool completely before peeling.

Step 3 of 6

Peel cold potatoes and cut in small medium sized cubes.

Step 4 of 6

Place all cubed potatoes in a stainless steel bowl.

Step 5 of 6

Add veggie salt, oregano, extra virgin olive oil and chilli flakes.

Step 6 of 6

Gently toss well, making sure not to use a spoon to combine in order to preserve the shape of the potatoes. Transfer to serving bowl. Enjoy!
