  • 2tablespoons flat-leaf parsley, chopped
  • 2 spring onions, chopped
  • 100grams light sour cream
  • 1teaspoons garam masala
  • 3 rasher streaky bacon
  • 2 stick celery, sliced
  • 1/4 cup hickory smoked almonds, chopped

Method

Step 1 of 3

Cook whole potatoes in a steamer over boiling water for 12 minutes or until just tender. Set aside until cool enough to handle, then cut into large pieces and transfer to a serving bowl.

Meanwhile, fry bacon for 5 minutes or until crisp. Cool and chop. Add to bowl with potato, onion, celery and parsley.

Step 3 of 3

Stir sour cream and garam masala together. Drizzle over potato salad and toss gently to combine. Sprinkle with almonds. Serving suggestion: Toss a salsa verde through the potato salad to serve.
