- 8 medium beetroot
- 1/2 leek
- 2tablespoons sunflower seeds
- 2tablespoons honey
- 100grams woolworths danish feta
- 1 balsamic glaze (to dress)

Description
A tasty earthy salad that's simple, easy and can be prepared the day before.
Method
Step 1 of 4
Peel and cut beetroot into small wedges.
Step 2 of 4
Just prior to serving crumble through the feta cheese, place in your serving bowl dress with balsamic glaze.
Step 3 of 4
Toss beetroot through the olive oil, place in a roasting pan and roast for 20 minutes at 200C.
Step 4 of 4
After 20 minutes add chopped leek, sunflower seeds and honey. Roast for around another 20 minutes then remove from heat and allow to cool. Once cooled refrigerate until ready to serve.
