  • 3 free range eggs, separated
  • 1/4 cup caster sugar
  • 250grams mascarpone cheese
  • 200grams sponge finger biscuits
  • 2teaspoons cocoa powder

Description

This classic tiramisu recipe is the perfect no-bake dessert to make ahead and serve at any occasion.

Method

Step 1 of 4

Combine coffee and wine in a shallow bowl. Refrigerate until needed.

Step 2 of 4

Using an electric mixer, beat cream in a large bowl until just-firm peaks form. Transfer to another bowl. Beat egg yolks and sugar in the same bowl until pale and creamy. Add mascarpone, then beat until just combined. Fold in cream.

Step 3 of 4

Beat egg whites in a clean, dry bowl until soft peaks form. Fold egg whites into cream mixture.

Step 4 of 4

Dip half the biscuits, one at a time, in coffee mixture for a few seconds, then place in a single layer over the base of a 20cm (8cm deep) round dish. Spread with half the cream mixture. Repeat with remaining biscuits, coffee and cream mixtures. Cover and refrigerate overnight. Dust with cocoa, just before serving.
