  • 2 cloves garlic, crushed
  • 225grams can bamboo shoots, drained
  • 440grams thin egg noodles
  • 50grams bean spouts, trimmed
  • 1 carrot, sliced
  • 1/2 cup white cup mushrooms, quartered
  • 1 onion, sliced
  • 1teaspoons spring onions, sliced (to serve)
  • 125grams small cooked prawns
  • 2tablespoons soy sauce
  • 4tablespoons peanut oil (save 2 tbs )

Method

Step 1 of 5

Place egg noodles into a bowl and cover with boiling water. Set aside for 5 minutes to soften. Drain.

Step 2 of 5

Heat peanut oil in a wok. Add sliced onion and garlic cloves and cook for 1 minute. Add sliced carrot, can drained bamboo shoots, straw mushrooms and peeled cooked prawns. Stir fry for 1 minute.

Step 3 of 5

Transfer to a bowl. Rinse wok.

Step 4 of 5

In the wok add 2 tbs peanut oil and heat over high heat. Add noodles. Cook, tossing for 2 - 3 minutes until heated through. Return veggies and prawns to wok with 2 tbs soy sauce and bean shoots. Toss for 2 minutes.

Step 5 of 5

Serve with sliced spring onions.
