  • 60grams butter, chopped
  • 1tablespoons cocoa, sifted
  • 200grams dark chocolate, chopped (70% cocoa)
  • 4 egg yolks
  • 6 egg whites
  • 1/2 cup caster sugar
  • 1/2teaspoons salt

Method

Step 1 of 5

Preheat oven to 200°C. Prepare 4 x 1-cup capacity soufflé dishes.

Step 2 of 5

Place 200g chopped dark chocolate (70% cocoa solids) and 60g chopped butter into a bowl over a saucepan of simmering water, taking care base of bowl does not touch water. Stir until melted and smooth.

Step 3 of 5

Remove from heat, cool slightly. Stir in 4 egg yolks, 1 tbs sifted cocoa and 1 tbs sifted plain flour.

In a separate bowl, beat 6 egg whites and a pinch of salt with electric beaters until soft peaks form. Continue beating, adding 1/2 cup caster sugar, 1 tbs at a time, beating well after each addition until a thick, glossy meringue forms. Add 1/3 of meringue to chocolate mixture, gently stirring until combined.

Step 5 of 5

Gently fold in remaining meringue until combined. Spoon mixture into prepared dishes. Bake for 20 minutes or until well risen and a crust forms. Dust with sifted icing sugar, if desired.
