- 1/2 cup reduced salt soy sauce
- 1/4 cup cooking sake
- 1/4 cup mirin
- 1/4 cup sugar
- 1 clove garlic, crushed
- 8 RSPCA approved chicken thigh fillets
- 2 cups jasmine rice, steamed (to serve)
- 2 bunches broccolini (to serve)
- 2 spring onions, sliced
Description
Mastering Japanese flavours is easy with this dish, where chicken thighs are coated in a tasty marinade consisting of soy sauce, sake, mirin and garlic.
Method
Step 1 of 4
Combine sauce, sake, mirin, sugar and garlic in a shallow dish. Stir to dissolve sugar. Add chicken, turning to coat. Marinate for 30 minutes or overnight in the fridge, if preferred.
Step 2 of 4
Strain marinade into a small saucepan. Simmer over low heat for 10 minutes or until thickened and slightly syrupy.
Step 3 of 4
Meanwhile, cook the chicken in a non-stick frying pan over medium-high heat for 10 minutes, turning halfway through cooking time, or until golden and cooked through.
Step 4 of 4
Remove from the heat and divide into bowls, along with steamed rice and broccolini. Spoon over sauce and garnish with spring onion. Serve.
