  • 1 small red capsicum, deseeded, finely chopped
  • 1 red onion, finely chopped
  • 250grams chicken mince (see Tip)
  • 1tablespoons smoked paprika
  • 4 tomatoes, finely chopped
  • 4 soft wholegrain wraps
  • 1/2 cup shredded mozzarella
  • 1/2 lemon, juiced
  • 1 cup baby spinach leaves (to serve)

Description

Use wraps to create a chicken quesadilla traybake. The kids will love this nutritionally approved Mexican-inspired dish.

Method

Step 1 of 5

Preheat oven to 220°C/200°C fan-forced. Line a large baking tray with baking paper.

Step 2 of 5

Lightly spray a large non-stick frying pan with oil, then place over medium heat. Add capsicum and half of the onion, then cook, stirring, for 5 minutes or until softened. Add chicken and cook, breaking up lumps with a wooden spoon, for 5 minutes or until browned. Add paprika and half of the tomato, then cook for 5 minutes or until tomato has softened slightly.

Place wraps on tray, overlapping slightly to form a large square. Spoon chicken mixture into centre of square and sprinkle with cheese. Fold to enclose filling and form a rectangle. Turn over. Lightly spray with oil, then bake for 25 minutes or until golden brown. Stand to cool for 10 minutes.

Meanwhile, combine remaining onion and tomato, and lemon juice in a small bowl.

Cut quesadilla into quarters, top with baby spinach and serve with salsa.
