  • 1/4 bunch mint, leaves removed, large leaves coarsely torn

A vibrant and aromatic symphony of Indian flavours, this chicken biryani is a budget-friendly delight that you'll make on repeat.

Method

Step 1 of 4

Heat a deep 22-24cm (base measurement) frying pan over medium heat. Add almonds. Cook, stirring often, for 3 minutes or until toasted. Transfer to a plate.

Step 2 of 4

Heat oil in pan over medium heat. Add chicken and cook, tossing occasionally, for 6 minutes or until slightly golden.

Step 3 of 4

Add sauce, 1 cup water and rice. Stir to combine. Increase heat to medium-high to bring to the boil. Reduce heat to low. Cover and cook for 12 minutes.

Step 4 of 4

Turn off the heat. Set aside, covered, for 5 minutes to steam. Scatter with toasted almonds and mint. Serve topped with yoghurt.
