  • 1 red apple, quartered, cored (thinly sliced)
  • 1 carrot (grated)
  • 1 small beetroot (grated)
  • 1tablespoons honey
  • 1tablespoons lemon juice
  • 200grams tzatziki
  • 60grams baby spinach leaves
  • 4 soft wholegrain wraps
  • 2teaspoons olive oil
  • 500grams chicken tenderloins
  • 100grams haloumi (finely grated)

Method

Step 1 of 5

Preheat oven grill to high. Line an oven tray with foil.

Step 2 of 5

Toss chicken with honey and oil to coat. Arrange in a single layer on tray. Press halloumi evenly onto chicken and season with pepper. Grill for 8 minutes or until golden brown and cooked through.

Step 3 of 5

Cover the wraps in foil and place on oven shelf below the chicken for the final 2 minutes of cooking time or until warmed through.

Meanwhile, to make the apple slaw, combine apple, beetroot, carrot and spinach in a large salad bowl. Toss gently with lemon juice and season to taste.

Spread 2 tbs tzatziki down centre of each wrap. Pile on slaw and top with chicken. Roll up to enclose fillings. Serve with remaining slaw and tzatziki.
