- 1/2 tomato, sliced (for cheese sandwich)
- 1/4 red capsicum, cut into strips (for cheese sandwich)
- 1/4 continental cucumber, thinly sliced and cut into sticks (for cheese sandwich)
- 1 mandarin (for snacks)
- 2 multi grain crispbreads (for cheese sandwich)
- 1teaspoons ground cinnamon (for honey-cinnamon roasted chickpeas)
- 1tablespoons tzatziki (for cheese sandwich)
- 40grams cheese, sliced (for cheese sandwich)
- 425grams can organic chick peas, drained, rinsed (for honey-cinnamon roasted chickpeas)
- 2teaspoons honey (for honey-cinnamon roasted chickpeas)
Method
Step 1 of 6
Cheese Sandwich: Top crispbread with cheese and tomato.

Wrap and place in lunch box with cucumber sticks, capsicum strips and 1 tbs Tzatziki Honey-cinnamon Roasted Chickpeas: 1. Place chickpeas on a plate lined with paper towel and set aside to drain for 1 hour, to remove excess moisture.

Preheat oven to 200°C. Line a baking tray with baking paper.

Combine chickpeas, honey and cinnamon in a medium bowl. Place on prepared tray.
Step 5 of 6
Roast, stirring every 10 minutes, for 25-30 minutes or until golden brown and crisp. Remove from oven and set aside to cool. Store in an airtight container for up to 1 week.
Step 6 of 6
Place half the chickpeas in a plastic container in the lunch box. Store remaining chickpeas in a plastic container.
