- 600grams beef, herb & garlic sausages, casings removed and discarded, roughly chopped
- 2tablespoons tomato paste
- 500grams fresh pizza dough balls
- 2tablespoons plain flour (for dusting)
- 1/3 cup Greek-style yoghurt
- 1/2 bunch mint, leaves picked, chopped
- 60grams baby spinach leaves
- lemon wedges (to serve)

Description
Enjoy this twist on a Turkish pide that uses beef sausage on a tangy tomato base. This quick and easy dinner recipe is sure to become a regular.
Method
Step 1 of 4
Preheat oven to 250°C/230°C fan-forced. Line 2 baking trays with baking paper. Heat oil in a large frying pan over medium-high heat. Cook sausage, breaking up with a wooden spoon, for 5 minutes or until well browned. Add tomato paste and cook, stirring, for 1 minute or until fragrant. Season with pepper and remove from heat.
Step 2 of 4
Divide each dough ball in half. Roll out 1 portion on a floured surface to make a 15 x 20cm oval. Top with one-quarter of the sausage mixture. Fold up sides, and twist to seal ends together. Place on tray. Repeat with remaining dough portions and filling.
Step 3 of 4
Bake, swapping trays between oven racks halfway through cooking, for 15 minutes or until dough is golden brown. Cool for 5 minutes.
Step 4 of 4
Combine yoghurt and mint in a bowl. Season with pepper. Dollop minted yoghurt over pides, top with spinach and serve with lemon wedges.
