  • 120grams Mexican seasoning
  • 420grams no added salt Mexican style 3 bean mix, rinsed, drained
  • 450grams microwave brown rice
  • 200grams Solanato tomatoes, halved
  • 1 avocado, deseeded, chopped
  • 1/2 cup coriander leaves
  • 1 white corn tortilla strips (to serve)

After a tasty and easy vegetarian meal? This recipe for spiced cauliflower chilli has only three steps and is ready in 25 minutes.

Method

Step 1 of 3

Process cauliflower, in 2 batches, in a food processor until finely chopped (do not over-process).

Step 2 of 3

Heat oil in a large frying pan over medium-high heat. Cook cauliflower, stirring, for 5 minutes or until light golden. Add seasoning and cook, stirring, for 30 seconds or until fragrant. Add beans and cup water, then cook, stirring, for 5 minutes or until warmed through. Season.

Step 3 of 3

Meanwhile, heat rice according to packet instructions. Divide rice among bowls. Top with cauliflower mixture, tomato, avocado and coriander. Serve with tortilla strips.
