  • 1kilograms carrots, peeled, diagonally cut into 1cm-thick slices
  • 1 onion, chopped
  • 1 cup chicken stock
  • 1/2 cup parmesan, grated
  • 1tablespoons olive oil
  • 1 cup panko breadcrumbs
  • 1tablespoons chives, snipped
  • 1 clove garlic, crushed

Method

Step 1 of 2

Preheat oven to 180°C. Heat oil in a saucepan. Add onion and garlic, and cook for 3 minutes or until soft. Stir in carrot and cook for 2 minutes. Stir in stock. Cover and simmer for 10 minutes.

Step 2 of 2

Combine breadcrumbs, chive, butter and parmesan in a bowl. Transfer carrot mixture to an ovenproof dish. Top with breadcrumb mixture and bake in the oven for 20-25 minutes until golden and crisp. Serve.
