- 3/4 cup brown sugar
- 1/2 cup rice wine vinegar
- 1/4 cup fish sauce
- 2 limes, juiced
- 1 tsp Chinese five spice
- 800grams pork belly, cut into 2.5cm cubes
- 250grams dried rice vermicelli
- 1 bunch choy sum, trimmed
- 1/4 cup unsalted roasted peanuts, coarsely chopped
- 1 long red chilli, thinly sliced
Description
Try these next-level noodles with sticky roast pork belly. Caramelised pork belly is paired with choy sum, crunchy peanuts and chilli for a winning dinner.
Method
Step 1 of 5
Place sugar, vinegar, fish sauce, lime juice and five spice in a small saucepan over medium heat. Season with pepper. Cook, stirring occasionally, for 8 minutes or until reduced by two-thirds. Set caramel aside to cool.
Step 2 of 5
Preheat oven to 200°C/180°C fan-forced. Line a large baking tray with baking paper.
Step 3 of 5
Place pork on tray, drizzle with caramel and toss to coat. Bake, basting with caramel from tray halfway through cooking, for 45 minutes or until pork is caramelised and cooked through.

When pork has 10 minutes cooking time left, cook noodles according to packet instructions. Separate choy sum leaves and stems. Cook in a saucepan of boiling water for 2 minutes or until bright green and tender. Drain.
Step 5 of 5
Divide noodles among bowls and top with choy sum and pork. Drizzle with caramel from tray and sprinkle with peanuts and chilli.
