- 4 medium truss tomatoes
- 2tablespoons extra virgin olive oil
- 2teaspoons caramelised balsamic vinegar
- 200grams grape tomatoes
- 6 baby bocconcini
- 1/2 bunch basil, leaves picked
- 1 fruitless hot cross bun

Method
Step 1 of 4
Preheat oven to 170°C. Roughly tear hot cross bun into 2cm pieces and place in a bowl with half of the olive oil and a pinch of salt. Toss to combine.
Step 2 of 4
Place hot cross bun pieces on a baking tray and bake for 5 minutes or until toasted and crunchy. Set aside.
Step 3 of 4
Cut tomatoes into chunks and tear bocconcini into halves. Arrange in a serving bowl.
Step 4 of 4
Drizzle over balsamic vinegar and remaining olive oil and season with salt and pepper. Scatter over basil and hot cross bun croutons to serve.
