- 1/4 cup plain flour
- 1 handful green oakleaf lettuce
- 1 avocado, roughly mashed
- 1 brown onion, thinly sliced
- 600grams sweet potato, peeled
- 2 tomatoes, thinly sliced
- 4 large flat mushrooms
- 1/3 cup aioli
- 2tablespoons olive oil
- 1 egg, whisked
- 4 slice extra tasty cheese

Method
Step 1 of 4
Using a spiraliser or mandolin, shred sweet potato into long thin strips and place into a bowl. Add egg and flour. Stir well to combine. Form 1/2-cups of mixture into 8 patties and place onto a tray.
Step 2 of 4
Preheat oven to 160°C. Line a large baking tray with baking paper. Heat 1 tbs oil in a large frying pan over medium heat. Cook sweet potato patties for 3 minutes each side until golden and cooked through. Transfer to tray and place in oven to keep warm.
Step 3 of 4
Heat remaining oil in pan. Cook mushrooms for 4 minutes each side or until golden and soft. Transfer mushrooms to tray and top each with a cheese slice. Place in oven to keep warm and melt cheese. Add onion to pan and cook for 5 minutes or until soft.
Step 4 of 4
Place a pattie onto each plate and spread with aioli. Top with lettuce, tomato, mushroom, onion, avocado and remaining patties, to serve.
