  • 2teaspoons olive oil
  • 1 medium yellow onion, peeled and diced small
  • 150grams beef mince
  • 150grams pork mince
  • 1 pinch sea salt
  • 1 pinch pepper
  • 1 large egg
  • 250grams ricotta cheese
  • 50grams parmesan cheese, divided and grated
  • 30grams panko breadcrumbs
  • 400grams marinara sauce, ready made
  • 14 pieces cannelloni tubes
  • 2tablespoons basil, fresh, chopped

Description

This comforting cannelloni dish is stuffed with a rich mixture of beef, pork, ricotta and parmesan and baked to bubbling perfection.

Method

Step 1 of 4

Heat a large pan on medium heat adding in the olive oil for 1 minute. Sweat the onions in the pan for 5 minutes until translucent. Add the beef and pork mince to the pan breaking it up with a wooden spoon for 10 minutes. Season and set aside to cool for 15 minutes.

Step 2 of 4

Once cooled add the mince mixture,egg, ricotta and 15 g of parmesan cheese and breadcrumbs to a bowl, combining everything together. Preheat the oven to 200°C. Using a 25cm x 30cm baking dish and spread out half of the marinara sauce on the bottom of the baking dish.

Step 3 of 4

Fill a piping bag with the mince and ricotta mixture, evenly pipe each cannelloni tube with the filling while lining the cannelloni on top of the marinara sauce.

Step 4 of 4

Once all the cannelloni are filled and lined in the pan, pour out the rest of the marinara sauce topping the cannelloni with basil and parmesan cheese. Cover the baking dish with foil and bake for 40 minutes. Remove the foil, allowing the cannelloni to cool and set for 10 minutes before serving.
