  • 200grams cheddar, shredded

Description

This one pot cabbage casserole is a nutritious and hearty vegetarian option, perfect for the colder months.

Method

Step 1 of 3

Place a pot onto medium-heat for one minute on the stovetop. Add in the canola oil and ground beef searing to brown the beef for 5 minutes. Drain off any excess fat stirring in the onions and garlic for 2 minutes.

Step 2 of 3

Stir in the rice, toasting for 2 minutes before adding in the diced tomatoes, cabbage and thyme. Season with salt and pepper turning the heat down to a simmer and covering the pot with a lid, cooking for 20 minutes until the rice is fully cooked.

Step 3 of 3

Remove from the heat giving the pot a stir before add the shredded cheese on top letting it melt for 2 minutes. Let cook for a few minutes before portioning.
