  • 250grams unsalted butter, softened
  • 1/4 cup Nestlé Sweetened Condensed Milk
  • 3 cups icing sugar mixture
  • 2 drops red food colouring gel
  • 1 1/2 cups plain flour
  • 1 1/2teaspoons baking powder
  • 2/3 cup caster sugar
  • 145grams Nestlé Bakers’ Choice Dark Choc Melts, melted
  • 125grams unsalted butter, melted
  • 1/4 cup milk
  • 3 eggs
  • 12 Jaffas
  • 24 spearmint leaves

Description

Whip up these delicious candy-cane cupcakes and spoil the family with magical bite-sized delights this Christmas.

Method

Step 1 of 4

Preheat oven to 180°C/160°C fan-forced. Line a 12-hole (1/3-cup) muffin tray with paper cases. Sift flour and powder into a bowl. Add sugar, dark chocolate, butter, milk and eggs. Using an electric mixer, beat until pale. Spoon into prepared muffin holes.

Bake for 20-25 minutes or until a skewer inserted into the centre of cupcakes comes out clean. Transfer to a wire rack to cool completely.

To make frosting, using an electric mixer, beat butter until creamy. Add condensed milk and beat until combined. Gradually add in icing sugar until fluffy.

Step 4 of 4

Place a 1cm star nozzle into piping bag. Dip a bamboo skewer in red food colouring. Make 5 red stripes up the inside of the piping bag. Carefully transfer frosting to bag. Pipe frosting over cupcakes. Decorate with Jaffas and spearmint leaves to serve.
