- 120grams unsalted butter
- 50grams dried blueberries
- 60grams pure icing sugar
- 1 egg, beaten
- 50grams almond meal
- 200grams plain flour
Description
Add dried blueberries to give these shortbread biscuits a lovely flavour.
Method
Step 1 of 5
Preheat oven 150°C (fan forced). Line a large baking tray.
Cream butter and sugar until fluffy. Add in beaten egg, a little at a time until all absorbed.
Step 2 of 5
Sieve in flour and almond meal, add in dried blueberries. Mix well to form a dough. Cover and rest for 10 minutes.
Step 3 of 5
Roll out the dough between 2 sheets of baking paper. Cut out the biscuits.
Step 4 of 5
Transfer to the baking tray and bake for 20 minutes or until they turned brown on the edges.
Step 5 of 5
Remove and let them cool down. Store them in an airtight container.
