  • 50grams cooking oil
  • 100grams sugar
  • 15grams baking powder
  • 250grams plain flour
  • 230mL coconut milk
  • 50grams pandan leaves

Description

Pandan and coconut milk is the best combination for a steamed cake, so full of fragrance.

Method

Step 1 of 7

Wash and cut pandan leaves into smaller pieces, around 2cm pieces.

Step 2 of 7

Place pandan leaves into a blender, pour in the coconut milk. Blend them for 1 to 2 minutes.

Step 3 of 7

Pass the mixture though a fine sieve or muslin cloth to extract the pandan coconut milk.

Step 4 of 7

Add sugar to the pandan coconut milk, stir until the sugar has dissolved. Add in the oil and mix well. Sieve plain flour and baking powder into the pandan coconut milk to form a smooth batter.

Step 5 of 7

Get ready your steamer and grease your cupcakes patty pans. Fill them with batter.

Step 6 of 7

Steam at high heat for 20 minutes. Use a skewer to test for doneness.
