To make Basque cheesecake
  • 15grams cake flour
  • 210grams cream cheese
  • 60grams caster sugar
  • 150grams thickened cream
  • 3 eggs
To make Strawberry mousse
  • 40grams cream cheese
  • 5grams gelatine powder
  • 40mL water
  • 150grams strawberry jam
  • 150grams thickened cream

Description

Creamy basque cheesecake top with sweet and tangy strawberry mousse perfect for Valentine's Day.

Method

Step 1 of 7

Preheat oven to 210°C, top and bottom heat. Line a 6 inch cake tin.

Step 2 of 7

To make basque cheesecake, combine cream cheese, sugar, thickened cream and eggs. Mix well and sieve in cake flour.

Step 3 of 7

Pour the batter into the prepared cake tin and bake for 40 minutes or until the top has a burnt surface. Leave aside to cool down.

Step 4 of 7

To make the strawberry mousse, combine cream cheese, thickened cream and strawberry jam. Mix well.

Step 5 of 7

Sprinkle gelatine power over water. Heat the gelatine mixture over some hot water. Stir until all dissolved. Take 3 tablespoons of the strawberry mousse mixture and mix with the dissolved gelatine. Now add this to the rest of the strawberry mousse mixture.

Step 6 of 7

Once the basque cheesecake has cooled down completely, return it to the cake tin. Pour in the strawberry mousse mixture. Leave in the fridge overnight.
