  • 1 avocado, peeled, chopped
  • 1/2 cup coriander leaves, chopped

  • 500grams beef rump steak, trimmed, thinly sliced
  • 1 red capsicum, thinly sliced
  • 1 red onion, halved, thinly sliced
  • 8 tortillas
  • 1 lime, cut into wedges (to serve)

Description

Make these easy beef fajitas for a midweek meal. Everyone will love the zesty flavour of the tomato avocado salad alongside the delicious char of the beef.

Method

Step 1 of 4

Combine tomato, avocado, coriander, lime juice and ½ tablespoon oil in a bowl. Combine recipe base and 2 tablespoons oil in a large bowl. Add beef, toss to coat. Place capsicum and onion in another large bowl. Add remaining ½ tablespoon oil, toss to coat.

Step 2 of 4

Heat a barbecue flat plate, or large non-stick frying pan, over high heat. Add capsicum and onion mixture. Cook, stirring, for 5 minutes or until softened and slightly charred. Transfer to a bowl. Cover to keep warm.

Step 3 of 4

Reduce heat to medium-high. Cook beef, in batches, for 1-2 minutes for medium or until cooked to your liking. Add to capsicum and onion, toss to combine.

Step 4 of 4

Prepare tortillas according to packet directions. Serve with beef mixture, tomato avocado salad and fresh lime halves.
