  • 20grams unsalted butter
  • 2 brown onions, finely chopped
  • 1 carrot, halved lengthways, cut into 1cm cubes
  • 2 stalks celery, cut into 1cm-thick pieces
  • 2teaspoons plain flour
  • 500grams Woolworths COOK roast beef with onion & garlic gravy
  • 40grams French onion soup mix
  • 1/2 Woolworths crusty baguette, sliced
  • 1/2 cup shredded tasty cheese
  • 1/4 bunch thyme

Description

Comforting and flavourful, this beef and French onion soup will ward off the winter chill and fill you right up. Serve with cheesy toast to mop up the tasty flavours.

Method

Step 1 of 4

Heat butter in a large heavy-based saucepan over medium heat until melted. Add onion, carrot and celery. Cook for 10 minutes or until softened. Stir in flour and cook for 2 minutes or until well coated.

Step 2 of 4

Add beef, gravy sachet, soup mix and 6 cups water to pan. Bring to the boil. Reduce heat to low and simmer for 30 minutes or until beef is tender.

Step 3 of 4

Transfer beef to a chopping board. Using two forks, shred beef into large pieces. Return beef to pan.

Step 4 of 4

Meanwhile, preheat grill to medium-high. Place bread on a tray. Sprinkle with cheese and half of the thyme. Grill for 1 minute or until golden and melted. Ladle soup among bowls. Top with remaining thyme. Serve with toast.
