Cream-cheese frosting
  • 250grams cream cheese, softened
  • 1/3 cup icing sugar mixture, sifted
  • 2 navel oranges
  • 125grams unsalted butter, softened
  • 1 cup caster sugar
  • 2 free range eggs
  • 2 cups self-raising flour
  • 2/3 cup Woolworths Greek-style natural yoghurt
  • 5 sprigs thyme
  • 1tablespoons maple syrup

Description

A symphony of citrus and sunshine in every bite, this wonderfully moist air-fryer orange cake makes a scrumptious morning or afternoon treat.

Method

Step 1 of 5

Grease a 6.5cm-deep, 20cm-round springform cake pan. Line base with baking paper.

Step 2 of 5

Zest and juice 1 orange. Using an electric mixer, beat butter, sugar and zest until pale and creamy. Add eggs, 1 at a time, beating after each addition. (Mixture may appear to curdle, but do not worry. Continue to mix.) Add flour, yoghurt and juice. Fold until combined. Spoon mixture into prepared pan. Smooth top. Cover tightly with foil.

Place pan in the basket of a 7L-capacity air fryer. Cook at 160°C for 30 minutes. Uncover and cook for a further 20-25 minutes or until a skewer inserted into the centre comes out clean and cake has pulled away from the side of the pan. Turn off air fryer and allow cake to stand in air fryer for 30 minutes. Remove cake from air fryer. Remove cake from pan and transfer to a wire rack to cool completely.

To make frosting, place cream cheese and icing sugar in a bowl. Using a whisk, whisk until smooth and creamy.

Step 5 of 5

Slice remaining orange. Place cake on a serving plate. Spread with frosting and top with orange slices. Sprinkle with thyme and drizzle with syrup. Serve.
