Instruction tip
Use-it-up tip:
This recipe will work well with any leftover pitted olives you have in the fridge.

Method

Step 1 of 3

Place flour on a plate. Season with pepper. Combine egg and 1 tbs water in a shallow dish. Combine breadcrumbs and parmesan in a separate shallow dish.

Step 2 of 3

Using one olive at a time, coat olive in flour mixture, shaking off excess. Dip in egg, then roll in breadcrumb mixture to coat. Place on a baking tray lined with baking paper.

Step 3 of 3

Preheat air fryer to 180°C for 2 minutes. Arrange half of the olives, in a single layer, in the air-fryer basket. Spray with oil. Cook for 8 minutes or until golden and crispy. Repeat with remaining olives. Serve olives with basil and lemon wedges.
