  • 500grams white mushrooms
  • 5milliliter virgin olive oil spray
  • 200grams wholemeal penne
  • 2 cup baby leaf spinach
  • 2 cloves garlic, crushed
  • 1 1/2 cup light Greek-style yoghurt
  • 160grams light tasty shredded cheese
  • 320grams roast chicken, meat shredded

Method

Step 1 of 2

Cook pasta according to packet instructions. Spray a large frying pan with oil and place over medium heat. Add garlic and sauté for 1 minute. Add mushrooms and cook, stirring, for 8 minutes or until tender and liquid from the mushrooms has evaporated. 

Step 2 of 2

Add spinach and cook a further 1 minute or until wilted. Remove from heat and stir in yoghurt, chicken and cheese. Season with pepper and serve.
