- 400grams loaf crusty bread, toasted (to serve)

Method
Step 1 of 2
Combine 2 tbs extra virgin olive oil, finely grated rind and 2 tbs juice from 1 lemon, 2 crushed garlic cloves and 1/4 cup finely chopped basil leaves in a ceramic bowl. Season with salt and pepper. Add 500g cooked cocktail prawns and toss to coat. Cover and stand for 20 minutes.
Step 2 of 2
Drain prawns. Arrange on a platter with artichokes, semi dried tomatoes, prosciutto, fetta and toasted bread.
