  • 1 cup coriander leaves
  • 1 cup continental parsley leaves
  • 1/4 cup extra virgin olive oil, plus extra
  • 1teaspoons ground cumin
  • 1 lemon, juiced and zested
  • 1/2 cup sunflower seeds
  • 1/4 cup sesame seeds
  • 1/2 cup pepitas
  • 1 clove garlic

Method

Step 1 of 1

In a food processor combine seeds, carrot, coriander, parsley, zest, lemon juice, garlic and cumin. Process to a rough paste. Add oil and 1/3 cup water. Process until smooth. Season to taste. Transfer to a jar and cover in a thin layer of extra oil. Seal jar and refrigerate until ready to use.
