- 3 cup leftover lettuce leaves, shredded
- 1 orange, segmented
- 1 lemon, juiced
- 1/2 cup olive oil
- 30grams flaked almonds, toasted
- 1 avocado, deseeded
Description
This coleslaw recipe is a neat way to use up leftover lettuce and the avocado vinaigrette is a welcome twist on classic slaw. Enjoy on burgers or as a side.
Method
Step 1 of 2
To make avocado vinaigrette, blitz together avocado, lemon juice and olive oil in a blender and season to taste. Place in the fridge until ready to serve.
Step 2 of 2
To serve, place slaw ingredients in a serving bowl and gently toss with vinaigrette.
