- 1/2 cup frozen peas
- 40grams snow pea sprouts
- 1 avocado, peeled, pitted, cut into 2cm cubes
- 1/2 lime, juiced
- 2teaspoons extra virgin olive oil
- 1teaspoons chilli flakes (optional)
- 2 slice sourdough, toasted
- 80grams goat’s cheese, crumbled
- 1 clove garlic, halved

Method
Step 1 of 4
Cook peas in a saucepan of boiling water for 2 minutes. Refresh in iced water and drain. Transfer to a mixing bowl and mash lightly with a fork.

Add avocado, lime juice and a pinch of salt and pepper, and mash lightly to combine. Set aside.
Step 3 of 4
Drizzle toasted sourdough slices with olive oil and rub lightly with half of a garlic clove.
Step 4 of 4
Top toast with pea and avocado mix, goat’s cheese, chilli flakes and pea shoots. Serve.
