- 2 continental cucumbers
- 1/2 bunch mint
- 2/3 cup fresh lime juice (6 limes)
- 2/3 cup caster sugar
- 1.50L soda water, chilled (to serve)

Method
Step 1 of 4
Combine 2/3 cup of the lime juice and 2/3 cup of the sugar in a bowl. Bruise half the mint (see tip) and add to lime mixture. Stand for 15 minutes or until sugar dissolves.
Step 2 of 4
Meanwhile, place remaining lime juice and remaining sugar onto separate saucers. Dip the rims of 4 glasses into lime juice and then sugar to coat. Set aside.
Step 3 of 4
Thinly slice 1/2 of a cucumber and set aside. Process remaining cucumber through a juicer. Remove mint from syrup and discard. Combine syrup and cucumber juice in a jug.
Step 4 of 4
Fill glasses with ice and some cucumber slices. Pour over cucumber mixture and top up with soda. Garnish with remaining mint and serve.
