  • 1/3 cup cornflour
  • 1 1/2 cup plain flour
  • 1.50kilograms chicken pieces
  • 1 lime, cut into wedges (to serve)
  • 1tablespoons cajun seasoning (see tip)
  • 2teaspoons smoked paprika
  • coleslaw (to serve)
  • 1/2teaspoons finely ground black pepper
  • 1 cup buttermilk
  • 1 egg
  • 2tablespoons sea salt flakes
  • 1L vegetable oil (for deep frying)

Method

Step 1 of 3

Combine 1 tbs salt, Cajun seasoning, paprika and pepper in a small bowl. Sprinkle on chicken pieces and place on a large plate. Cover and refrigerate for 2 hours, or overnight if time permits.

Step 2 of 3

Combine flour, cornflour and remaining salt in a large bowl. Whisk buttermilk and egg together in a large bowl. Coat chicken pieces with buttermilk then flour mixture and place on a tray.

Step 3 of 3

Line a baking tray with baking paper and place a wire rack over paper. Heat oil in a deep frying pan over medium heat. When hot, cook chicken in batches for 10 minutes or until golden, crisp and cooked through. Transfer to tray. Serve with coleslaw and lime wedges.
