  • 125grams butter
  • 1teaspoons vanilla extract
  • 4teaspoons gelatine powder
  • 1/2 cup plain flour
  • 2tablespoons coconut flakes
  • 1 egg
  • 1/3 cup caster sugar
  • 1 1/2 cup caster sugar
  • 250grams soft & juicy figs, chopped

Method

Step 1 of 4

Preheat oven to 180°C. Grease and line a 30x20cm slice pan with baking paper. Beat butter and sugar with electric beaters until pale and creamy. Add egg and beat until combined. Sift flour and baking powder over butter mixture. Stir to combine. Press into base of pan. Bake for 15 minutes or until just golden. Cool for 10 minutes.

Reserve 2 tbs of the caramel for serving. Combine remainder with fig. Spread over cooled base.

Step 3 of 4

Using electric beaters, beat caster sugar and 1/2 cup cold water in a bowl for 5 minutes or until white. Sprinkle gelatine over 1/2 cup hot water and using a fork, whisk until dissolved. Add gelatine mixture to sugar mixture and beat for a further 10-12 minutes or until mixture is thick. Add vanilla and continue beating for a further 1-2 minutes or until well combined.

Step 4 of 4

Spread over caramel layer and sprinkle with coconut. Set aside at room temperature for 30 minutes. Cut into squares and drizzle with reserved caramel. Store in an airtight container.
