- 500grams rock salt
- 1kilograms brushed potatoes, scrubbed
- 1/2 cup milk
- 100grams butter, chopped extra to serve
- 1 sprigs thyme (to serve)
Description
Master silky mashed potato with this easy recipe. Use yours as the ideal side dish, or top with crispy bacon, blue cheese or spring onion for a loaded version.

Step 1 of 3
Preheat oven to 220°C/200°C fan-forced. Place salt in a 20 x 30cm roasting pan, shaking to evenly distribute salt. Pierce potatoes with a fork 5 times, then arrange over salt. Cover with foil and bake for 1 hour 15 minutes or until tender when pierced with a knife.

Remove pan from oven. Set aside for 10 minutes to cool slightly. When cool enough to handle, halve potatoes lengthways. Working with 1 potato half at a time, use a spoon to scoop out flesh into a fine sieve. Reserve skins (use to make Spicy potato skins). Discard salt. While flesh is still warm, push through sieve into a large bowl).

Add milk mixture to potato. Season well and stir with a wooden spoon until smooth and combined. Serve mashed potato topped with extra butter and thyme, and seasoned with pepper.
