Spicy Pumpkin Dip

- 1/2 cup sour cream
- 1/3 cup coriander leaves, finely chopped
- 5milliliter virgin olive oil spray
- 1teaspoons ground cumin
- 2teaspoons moroccan Seasoning
- 1 pinch pepper (for seasoning)
- 2teaspoons cumin seeds
- 1teaspoons olive oil
- 500grams pumpkin, peeled, deseeded, diced
- 1 pinch pink salt ground (to taste)
Method
Step 1 of 6
Preheat oven to 220°C. Line a baking tray with baking paper.
Step 2 of 6
Put pumpkin onto prepared tray and spray with olive oil. Sprinkle with salt and pepper. Bake for 20 minutes or until tender. Cool.
Step 3 of 6
Place pumpkin, Moroccan seasoning, cumin, sour cream and coriander into a food processor. Process until a smooth dip forms.
Step 4 of 6
Spoon into a serving bowl. Cover and refrigerate until required.
Step 5 of 6
Heat oil in a small frying pan over a medium heat. Add cumin seeds and cook, shaking pan often, until golden and aromatic.
Step 6 of 6
Sprinkle toasted cumin seeds onto dip just before serving.
