Place flour, dry yeast, and salt into a bowl and mix to combine.

Add 1 cup warm water and olive oil. Stir with a wooden spoon to combine and then, using your hands, bring the dough together.

Turn the dough out onto a lightly floured surface and knead for 5 minutes until smooth and elastic.

Grease a large bowl and place the dough into it. Cover the bowl with plastic wrap and keep in a warm place until it has doubled in size (approx. 45-50 minutes).

Preheat oven to 200°C. Brush a 30x25cm baking tray with olive oil.

Punch down dough with your fist. Turn onto a lightly floured surface and knead again for 2 minutes or until smooth and elastic.

Roll into a rectangle approximately 30x18cm and about 8mm thick. Transfer to greased tray. Brush with olive oil and stand for another 30 minutes or until doubled in height.

Use your fingertips to make a dimpled patter over the top of the dough. Sprinkle rosemary and sea salt flakes over the surface of the focaccia. Drizzle with 1 tbs olive oil.

Bake in preheated oven for 20 minutes or until golden and cooked through.
