- 1 brown onion, finely diced
- 2 lemon, rind finely grated, 1/4 cup juiced
- 800grams can diced tomatoes
- 1 cup brown sugar
- 1tablespoons vegetable oil

Method
Step 1 of 2
Heat vegetable oil in a saucepan. Add brown onion and cook for 3 minutes or until soft. Add curry paste, stir and cook for 1 minute or until aromatic.
Step 2 of 2
Add can diced tomatoes, cup brown sugar, finely grated rind of lemon and lemon juice. Stir until combined and mixture comes to the boil. Simmer for 10 minutes or until thickened. Transfer to a serving bowl. Serve warm or cold.
