  • 1/3 cup 100% pure maple syrup
  • 2 eggs
  • 1tablespoons brown sugar
  • 1/3 cup vegetable oil
  • 400grams Free From Gluten banana bread mix

Method

Step 1 of 4

Preheat oven to 180°C/160°C fan-forced. Line a 12-hole, 1/3-cup capacity muffin pan with paper cases.

Step 2 of 4

Combine gluten-free banana bread mix, bananas, eggs, oil and 1/4 cup maple syrup in a bowl. Divide mixture among pan holes.

Step 3 of 4

Combine almonds, brown sugar and remaining maple syrup in a bowl. Spoon over muffin mixture in pan.

Step 4 of 4

Bake muffins for 20 minutes or until golden and a skewer inserted in centres comes out clean. Cool in pan for 10 minutes. Transfer to a wire rack to cool completely before serving.
