  • 700grams zucchini
  • 1/2 cup mint leaves, firmly packed
  • 1/2 cup basil, firmly packed
  • 3/4 cup macadamias
  • 1 garlic clove
  • 1/2 cup avocado oil
  • 1/2teaspoons salt
  • 2tablespoons lemon juice
  • 1 cup frozen peas
  • 1/2 cup semi dried tomatoes
  • 1 avocado

Method

Step 1 of 2

Using a spiraliser or mandolin, julienne 700g zucchini and place in a bowl. Set aside. Process 1/2 cup firmly packed mint leaves, 1/2 cup firmly packed basil with 1/4 cup toasted chopped macadamias and 1 crushed garlic clove until finely chopped. Add 1/2 cup avocado oil, a good pinch of salt and 1 tbs lemon juice and process until smooth and well combined.

Gently toss herb dressing through the zucchini noodles to coat. Add 1 cup thawed peas, 1/2 cup drained halved semi-dried tomatoes, 1/2 cup chopped toasted macadamias. Peel, seed and chop 1 avocado and toss gently with 1 tbs lemon juice. Add avocado to vegetables, season to taste and gently toss together and serve.
