- 1 avocado, peeled, diced
- 1/4 red cabbage, shredded
- 4 spring onions, finely sliced
- 1tablespoons white balsamic condiment
- 1 orange, peeled and segmented
- 1 orange juiced and rind
- 2tablespoons sunflower kernels
- 1teaspoons dijon mustard
- 120grams baby kale
- 1/4 cup flaxseed oil
Method
Step 1 of 2
Combine kale, cabbage and spring onion in a large bowl. Peel 1 orange and remove segments, catching any juice in a separate bowl, and add to kale mixture with avocado.
Step 2 of 2
Juice remaining orange and add to bowl. Whisk in balsamic, oil and mustard until combined. Pour over salad and toss well. Sprinkle over sunflower kernels. Serve.
