Method
Step 1 of 5
Bake mud cake according to packet instructions, using eggs, vegetable oil and 1⁄2 cup water. Cool cake completely.
Step 2 of 5
Roughly chop cake and place in a large bowl. Using clean hands, crumble cake.
Step 3 of 5
Make mud cake icing according to packet instructions, using butter. Add to crumbled cake and mix to combine.
Step 4 of 5
Line 2 large baking trays with baking paper. Compact and roll tablespoonfuls of mixture into egg-shaped balls to make 30 in total. Insert each ball with a cake pop stick or skewer. Refrigerate for 15 minutes or until firm.
Step 5 of 5
Place chocolate in a small heatproof bowl over a small saucepan of simmering water (make sure base of bowl doesn’t touch the water). Cook for 5 minutes, stirring occasionally, or until melted. Dip eggs, 1 at a time, into chocolate to coat, allowing excess chocolate to drain off, then scatter with 100s & 1000s. Return to trays, then refrigerate for 15 minutes or until set. Serve.
