- 1kilograms Philadelphia cream cheese, softened
- 2 cups caster sugar
- 2 cups thickened cream
- 1teaspoons cooking salt
- 1teaspoons vanilla extract
- 1/3 cup plain flour
- 180grams Cadbury baking white chocolate, melted
- 1 cup kombucha
- 250grams strawberries, hulled, halved
- 125grams raspberries (plus extra 60g to serve)
- 125grams blueberries (plus extra 60g to serve)
- 125grams blackberries (plus extra 60g to serve )
- 30grams Cadbury Flake caramilk, crumbled

Description
Make this white chocolate Basque cheesecake which has a lovely caramelised crust. Plus, learn how to macerate berries, they're perfect with this cake.
Method
Step 1 of 5
Preheat oven to 220°C/200°C fan-forced. Grease a 20cm round springform pan. Line base and side with baking paper, extending paper 10cm above side.
Step 2 of 5
Using an electric mixer, beat eggs until pale and fluffy. Add cream cheese and beat, scraping down sides, until smooth and combined. Add 1 1/2 cups sugar, cream, salt and vanilla, then beat until combined. Add flour and beat until combined. Fold in melted chocolate. Pour mixture into pan.

Bake for 1 hour or until cheesecake is dark brown and has set but with a slight wobble in centre. Set aside to cool completely.

Meanwhile, place kombucha and remaining sugar in a medium saucepan over low heat, stirring, until sugar has dissolved. Remove pan from heat and stir in berries. Stand for 1 hour.
Step 5 of 5
Remove and discard baking paper from cheesecake. Transfer to a serving plate. Serve with macerated berries, extra berries and caramilk.
