  • 500grams watermelon, cut into pieces
  • 1/2 bunch fresh mint, leaves only
  • 1/2 red onion, peeled and sliced finely
  • 1tablespoons lemon juice, freshly squeezed
  • 160grams marinated goats cheese
  • 1 pinch freshly ground pepper
  • 1 pinch sea salt flakes
  • 2tablespoons pistachios, roughly chopped

Method

Step 1 of 5

In a small bowl combine red onion, lemon juice and 1 teaspoon salt and leave for 15 minutes.

Step 2 of 5

Finely shred any big leaves of mint, leaving small ones whole.

Step 3 of 5

Gently toss watermelon and goats cheese together, add shredded mint leaves, leaving small leaves to decorate and then place on a platter.

Step 4 of 5

Drain red onion, discarding lemon juice, and scatter with pistachios and reserved mint leaves.

Step 5 of 5

Season with black pepper and serve.
