  • 4 Belgian waffles
  • 2 oranges, segmented
  • 3 kiwifruit, peeled, thickly sliced
  • 2 passionfruit, halved
  • 125grams blueberries
  • 2 cups strawberry yoghurt
  • 1 cup coconut flakes, toasted
  • 1/2 cup Woolworths maple syrup
  • 1/2 cup water

Description

After a beautiful breakfast idea? Make mouths water with this waffle breakfast platter. With so many tasty toppings there's something for everyone.

Method

Step 1 of 3

Place frozen berries, sugar and water in a small saucepan and bring to the boil over medium-high heat. Reduce heat to low and simmer, uncovered, for 5 minutes or until berries are warmed through and liquid has reduced by half. Transfer to a bowl.

Step 2 of 3

Toast waffles until golden and heated through. Break waffles into large pieces.

Step 3 of 3

Arrange waffles, fruit, yoghurt and berry compote on a large platter. Scatter over coconut. Drizzle waffles with a little syrup. Serve with remaining syrup.
