  • 1/2 cup Woolworths smooth peanut butter
  • 1 cup pure cream
  • 1/4 cup Woolworths maple syrup
  • 100grams dark chocolate, chopped
  • 550grams banana bread, cut into 2cm pieces
  • 3 bananas, cut into 2cm-thick rounds
  • 250grams strawberries, hulled
  • 5milliliter olive oil cooking spray
  • 8 vanilla marshmallows
  • 1/3 cup unsalted pistachios, finely chopped
  • 1 red apple, thickly sliced into rounds
  • 3 kiwifruit, cut into wedges
  • 3 mandarins, peeled, separated into segments
  • 2 pears, halved, cored, cut into thin wedges
  • 1/4 bunch mint, sprigs picked

Description

Fresh and grilled fruit, banana bread and marshmallows dipped in peanut butter fondue. This spectacular platter will be a big hit at brunch or a barbecue.

Method

Step 1 of 4

Place peanut butter, 1/2 cup cream and 2 tbs syrup in a heatproof, microwave-safe bowl. Microwave, uncovered, on medium for 1 minute 30 seconds, stirring every 30 seconds with a metal spoon, or until melted and smooth. Transfer to a bowl.

Step 2 of 4

Place remaining cream and syrup in a separate heatproof, microwave-safe bowl. Microwave, uncovered, on high for 1 minute or until heated through. Add chocolate and stand for 1 minute. Stir with a metal spoon until melted and smooth.

Step 3 of 4

Thread banana bread, banana and strawberries onto 8 metal skewers. Spray lightly with oil. Heat a chargrill pan over high heat. Cook skewers for 5 minutes, turning, or until golden. Remove skewers from heat. Carefully add marshmallows to tops of skewers. Cook for 1 minute or until warmed through.

Step 4 of 4

sprinkle some of the pistachios over peanut butter fondue. Arrange fondue, chocolate mixture, skewers and fruit on a large platter. Scatter over mint and serve with remaining pistachios.
